 Bread Flour

I used to get my bread from the wee deli in Douglas St. When they closed down, some 12-15 years ago, I tried making my own. In all modesty, it turned out trally well. I was so chuffed and hooked, I've been making bread ever since.

In the last month or so, everybody and their dog must be doing the master bakers course as I can't get any flour for love nor money - the bassas have even snaffled all the yeast. ☹ Apparently, you can buy both on EBay at prices that will make your eyes water - about a tenner for 1.5kg of flour and the same for a small pot of dried yeast.

I used the last of my bed flour this week. Anybody know where I can get some more without having to sell the family silver?

local shops/convenience shops rather than supermarkets. Also usually find aldi better stocked than most other supermarkets.

Her indoors has taken to the bread making as well GG this last month or so and its been delicious. She got her flour from the wee shop up the street. You know the local type of convenience store that sells the 'Happy Shopper' brand goods.

And although my eyes were open
They just might as well be closed

£4 for 10 x 5g bags of bread yeast from amazon. Dunno if that’s any good or not though 🤷🏻‍♂️

GG I also have been making bread since before Christmas and like you I cannot get any in Aldi or Tesco
However I did read that plain flour will be every bit as good as strong bread flour and Aldi did get a delivery this morning but it had all gone by the time I got there :(

There is a Nisa Shop which my daughter goes to and she got me 2 x 1.5 kg bags of local Mungoeswell farm organic bread flour but it is £2.70 a bag I have used it before and the bread does have a better taste but not 4 times better than the 84p bags in Aldi

Buffy, Berkey - thanks for the offers - really appreciate it. SR flour is best for making cakes and biscuits, allegedly. I use a mixture of strong white and wholemeal to make bread.

I still have one and bit tins of dried yeast which I won't be using until I manage to get some more flour. It should reappear when the flour does. I'd imagine the novelty will wear off soon for those part time, fair weather bakers. 😉

One of my neighbours actually works in a local supermarket. Spoke to him yesterday and asked when the best time would be to find some flour in store. He said he would look out for it and get me a couple of bags, which would keep me going for about 3 weeks.

Am I morally bankrupt? ☹

If you still struggle, might be worth checking if your local milk delivery operative might also delivers flour.

GG when I worked in the bakeries we used to get people asking for the odd kg here and there. With yeast we used to just give the fresh yeast for free as it was normally only small amounts.
Don't be afraid to ask a local Baker or even at the In-store bakeries.

I've had good luck finding bread flour in the smaller Sainsbury's near me. They don't have it very often but I pop in a few times a week and I've managed to pick up four bags over the weeks.

They even had yeast once!

SR is best for cakes and biscuits, Jake - thanks all the same. My neighbour, who works in a local supermarket, came up with the goods yesterday, so I'm sorted for the next 3 weeks but I realise my morals are now on a par with Thomas O'Malley, the alley cat.. ☹

Next time I need some more flour, I'm going for the Mr Bean routine - you know, fill a sleeping bag with inflated balloons and leave it at the supermarket door the night before, to keep my place at the head of the queue next morning....

Yea, saw that, mate, but it does say on the packet that SR flour is best for cakes and biscuits - besides, I use a mixture of strong white and wholemeal flour which produces a very nice loaf.

I knead it with my own fair hands, BPP. Breadmakers are for amateurs. 😉

Electric, fan assisted, oven. 15 mins at 200°C, rotate and then 60 mins at 180°C

Nah, turn the loaves around through 180° and swap those on the lower shelf with those on the upper after 15 mins at 200°C. Turn the dial to 180°C and leave for a further 60 mins. The initial hot blast allows the bread to rise and form a crust.

I normally make 4 small loves from 1.5kg of flour, using 1kg strong white and 500g wholemeal flour.

Is the bread not dry GG?
I know I do it in bigger batches but an hour n 10 seems awvy long.
I don't have steam on my oven but I do throw a wee cup of water on the base when I put my bread in the oven.
For an open topped loaf it gets 25 minutes max at 240 degrees.
Sandwich loaves get 20 minutes with lids on and 5 without.

No, I put a bowl of water in the oven. I've often given loaves away to friends and relatives and the general consensus is that I should go into business. 🙂

One of the reasons I started making my own is that bread available for sale hasn't been baked for long enough, If you roll it in your hands it turns into doughy mixture again, as it contains so much water. You have to toast it to improve its texture and taste, imo.

That is interesting G.G.
This is my favoured method

I make 2 at a time 1kg of strong white
2 sachets of yeast
2 teaspoons of salt
A wee drop oil (any) except duckhams before ye ask :)
600 mill of warm water
knead for 10 mins
let it sit for an hour
knead for 2 mins the put into tins
let it sit for another 1/2 hour
ten mins at 230 then 30 mins at 190
Perfect crusty bread every time

According to the TV last night there's loads of flour, the bag makers/printers cannot keep up with demand.

The answer seems to be buy in bulk bags, I wondered if the mill in Kirkcaldy would oblige?

The buffalo farm at boglily has flour both plain and SR got mine delivered with my freezer pack,veg and extra steak pies today. Order online delivery a fiver but 3 pounds off if you spend over £50. Top notch beef,buffalo, pork etc. Sausages and burgers are excellent. The individual steak pies are amazing. Think delivery is running about 6 days ATM. My wee one is desperate to make millionaires shortbread but cannot find condensed milk anywhere. Have got some of the caramel can this be substituted?

My mum loves to bake and had to use caramel condensed milk last week in the tray bakes she made on Thursday. They were outstanding honestly.
